Short answer
Because vinegar is acetic acid, which PubChem describes as having a pungent, sour, vinegar-like odor, and spraying it on a mattress leaves both the acid and water in the cover and foam. The smell lingers until the moisture and residue leave. If it turns musty, water reached the foam. Low-moisture professional cleaning removes the residue without adding more liquid.

HEPA vacuuming, enzyme treatment for organic odor, dry vapor steam and UV-C. We recommend cleaning twice a year.
Vinegar and baking soda is the most shared mattress-cleaning recipe online. It's also the reason many people end up searching "mattress smells like vinegar."
Why the smell hangs around
Household vinegar is a dilute solution of acetic acid, which PubChem records as pungent with a "sour, vinegar-like odor" (PubChem). Spray enough to dampen the cover and some soaks into the quilting and foam below. The smell keeps coming off until that liquid is gone, and foam gives up moisture slowly (why foam is slow to dry).
When vinegar smell turns into something worse
If the vinegar smell fades into a musty one, the bed got wetter than it looked. That's the pattern we describe in why a wet-cleaned mattress can smell worse later and signs your mattress was overwetted. If it turns sour, the original sweat odor is coming back through (sour smell).
What to do now
- Don't re-spray. More liquid means more to come back out.
- Move air across the bed with a fan and lower the room's humidity.
- Skip fragrance. It adds a third smell to the mix.
Why we don't use DIY recipes
Our page on viral recipes, ingredient by ingredient explains what each one does to a mattress. Professional cleaning uses HEPA vacuuming, enzyme treatment for organic odor and low-moisture dry vapor steam, so the original odor comes out without leaving a new one behind.
How we get the smell out
This section is our view. Every Sleep Sanitation visit starts with a nose-and-eyes inspection to find where the odor actually lives, then HEPA vacuuming, enzyme treatment on organic odor, low-moisture dry vapor steam from our Italian-made Vapor Clean machines, UV-C light treatment and a moisture check before we leave. That sequence goes after the source of the smell instead of covering it with fragrance. The first mattress is $199 Fall 2026 special (regularly $249), any size. We recommend cleaning every mattress twice a year so odor never gets a head start. Not sure what your bed needs? Take the 60-second mattress quiz, or schedule your cleaning.
