Short answer
A sour smell comes from bacteria breaking down sweat and skin oil into volatile fatty acids. The American Society for Microbiology describes one body-odor compound as cheesy-smelling isovaleric acid, and PubChem records butyric acid's odor as unpleasant and rancid. Those acids build up in the mattress cover and top foam, and removing them takes enzyme treatment and low-moisture cleaning.

HEPA vacuuming, enzyme treatment for organic odor, dry vapor steam and UV-C. We recommend cleaning twice a year.
Sour, vinegary, cheesy or "like old gym clothes" is one of the most searched mattress smells, and it has a clear cause.
What makes the smell sour?
Fresh sweat is nearly odorless. Skin bacteria break down sweat and skin oil into short-chain fatty acids, and those acids are what smell sour. The ASM notes that a skin bacterium turns leucine in sweat into isovaleric acid, "a cheesy-smelling compound," and that other volatile fatty acids add to body odor (ASM). PubChem describes butyric acid's odor as unpleasant and rancid (PubChem). A mattress that has absorbed years of sweat gives those bacteria a steady supply.
Why is it worse in summer or after a warm night?
Heat and moisture speed everything up: more sweat goes into the bed, and warmth helps lift the odor out of it. That's why a sour smell can seem to appear overnight in a hot spell.
Is sour different from musty?
Yes. Sour points to sweat and body oil; musty points to damp and mildew (musty mattress smell). An ammonia edge points to urine (urine and odor guide). Getting the source right matters because each one needs a different first step.
How to get rid of a sour mattress smell
Baking soda can soften the edge on the surface (does baking soda work?), but it doesn't reach the buildup. Enzymes are made to break down organic soil like sweat and skin oil (enzymes vs fragrance). We pair enzyme treatment with dry vapor steam and HEPA vacuuming (how the two work together), then recommend a washable organic protector and twice-a-year cleaning to keep the sourness from building back up.
How we get the smell out
This section is our view. Every Sleep Sanitation visit starts with a nose-and-eyes inspection to find where the odor actually lives, then HEPA vacuuming, enzyme treatment on organic odor, low-moisture dry vapor steam from our Italian-made Vapor Clean machines, UV-C light treatment and a moisture check before we leave. That sequence goes after the source of the smell instead of covering it with fragrance. The first mattress is $199 Fall 2026 special (regularly $249), any size. We recommend cleaning every mattress twice a year so odor never gets a head start. Not sure what your bed needs? Take the 60-second mattress quiz, or schedule your cleaning.
